Pumpkin Seed and Kale Salad:

- 1 small pumpkin or butternut squash, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups chopped kale
- 1/2 cup pumpkin seeds (pepitas), toasted
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese (optional)

2. In a large bowl, massage the chopped kale with a small amount of olive oil for a few minutes to soften the leaves.

4. Add the roasted pumpkin, toasted pumpkin seeds, dried cranberries, and optional feta cheese to the bowl of kale.
5. Drizzle the dressing over the salad and toss until all ingredients are evenly coated.
6. Serve immediately or refrigerate for an hour to let the flavors meld together.
